Crockpot Mexican Chicken

Matthew and were both more than ready to say adios to the bad eating we embraced over the holidays, so it was nice to pull out that friendly crock-pot and fill it with whole foods.
I was especially excited about this recipe because it was so simple!
I did SO MUCH COOKING from Thanksgiving to New Years that I am *almost* sick of my kitchen!
So to be able to dump these simple ingredients in the crock-pot and have minimal cleanup helped make the transition from holiday foods to whole foods MUCH easier!

Christmas Treats: Graham Cracker Cookies

You may have seen these or even had them with chocolate on the bottom, but we never made them that way. When you leave the chocolate off, you get a gorgeous golden color all around and a deeply satisfying toffee taste. They are so simple to make and I've never met someone who didn't enjoy them. However, I've also never met someone who loved them as much as Grandmom and I do!
I think I like the cookies so much because there are so many memories of her wrapped up in them.

Buffalo Chicken Casserole (Paleo)

Matthew is always bragging about my cooking to other people which is just the sweetest thing.
He likes to say we have "restaurant quality food at home every night" and that's a compliment I will take!
I do find joy in cooking things that are fun to eat and don't leave us feeling bloated or stuffed afterwards.
This casserole is the perfect example of that. 
It's quite flavorful without being too heavy.

Chickpea Shawarma Pitas

If you aren't familiar with Chickpeas/Garbanzo beans, don't shy away from this meal!
They are just the bland little beans that you make hummus or some Greek salads with.
Truly, they just end up tasting like whatever spices you add to them.
I typically like to eat this with some Tzatziki, but I just went with what I had on hand tonight.
That ended up being spicy hummus from Aldi which also a treat!
