Sheet Pan Meals: Chicken Fajitas

 

In an attempt to branch out from the crock pot, I have ventured into making sheet pan meals! These happen to be QUICK and DELICIOUS. The less time I have to spend making dinner, the better these days, so I've really appreciated the 4 sheet pan meals I'll be sharing with you over the next 4 weeks. I started out with fajitas because, well, I can't get enough Mexican food! Hope you enjoy!

  • 2lbs Chicken Tenderloins
  • 3-4 Bell Peppers, sliced in thin strips
  • 1-2 Sweet Onions
  • 1 tsp Cumin
  • 1.5 tsp Chili Powder
  •  1 tsp Garlic Powder or Minced Garlic
  • 2 tsp Paprika
  • Salt and Pepper to taste
  • 1 tbsp EVOO
  • 1 Lime
  • Sides: Tortillas, black beans, Spanish rice, salsa, guac, lettuce, etc. 
  1. Preheat oven to 400 and use EVOO to oil large baking sheet
  2. Prep veggies (onions and peppers)
  3. Combine spices in small bowl
  4. Spread chicken, onions, and peppers on sheet pan then sprinkle with spice mixture
  5. Bake for 20-30 minutes or until chicken is cooked through
  6. Squeeze lime over top of fajitas and serve with warm tortillas and favorite toppings.
