Sheet Pan Meals: Chicken Fajitas
In an attempt to branch out from the crock pot, I have ventured into making sheet pan meals! These happen to be QUICK and DELICIOUS. The less time I have to spend making dinner, the better these days, so I've really appreciated the 4 sheet pan meals I'll be sharing with you over the next 4 weeks. I started out with fajitas because, well, I can't get enough Mexican food! Hope you enjoy!
- 2lbs Chicken Tenderloins
- 3-4 Bell Peppers, sliced in thin strips
- 1-2 Sweet Onions
- 1 tsp Cumin
- 1.5 tsp Chili Powder
- 1 tsp Garlic Powder or Minced Garlic
- 2 tsp Paprika
- Salt and Pepper to taste
- 1 tbsp EVOO
- 1 Lime
- Sides: Tortillas, black beans, Spanish rice, salsa, guac, lettuce, etc.
- Preheat oven to 400 and use EVOO to oil large baking sheet
- Prep veggies (onions and peppers)
- Combine spices in small bowl
- Spread chicken, onions, and peppers on sheet pan then sprinkle with spice mixture
- Bake for 20-30 minutes or until chicken is cooked through
- Squeeze lime over top of fajitas and serve with warm tortillas and favorite toppings.
