Crockpot Balsamic Chicken

Passes for fancy Italian dish, but you only had to throw it all into the crockpot? Check!
If you're stressing about what to make when you have guests over, this recipe will put your worries to ease. It's really tasty and versatile! You can serve it over pasta or rice, and add on a salad or a steamy slice of homemade bread! We've eaten this meal all of those ways! You can "fancy up" this dish even more by mixing some EVOO with more of the balsamic vinegar and letting your guests dip their bread in it. Whenever I make an Italian dish, I enhance the process by listening to Dean Martin and speaking with a terrible Italian accent most of the night. Try it!
- 2 lbs Chicken (I've started using thighs in all recipes. The dark meat has a richer taste!)
- 2 cans Diced Tomatoes (drain liquid from 1 can)
- 1 Sweet Onion
- 4 Garlic Cloves
- 3 tbsp Balsamic Vinegar
- 1 tbsp Italian Seasoning
- Salt + Pepper to taste
- Slice onion and mince garlic.
- Lay the chicken to the crockpot and season with salt and pepper.
- Add the rest of the ingredients and cook on low for 8 hours.
