Hearty Apple Oatmeal
If you're looking for a simple gluten free breakfast, here it is! This recipe is straight from the Daniel Plan Cookbook. We ate LOTS of this when we were strictly following the guidelines from the Daniel Plan and still have it every other week or so. Neither of us are big fans of oatmeal, but when I make it this way, I actually enjoy it! Some of that enjoyment comes from knowing I've started the day off with a healthy meal. Doing that spurs on good habits the rest of the day too doesn't it?
I tweak this recipe some every time I make it. Sometimes I don't have any walnuts, or we are out of apples, and recently I've been adding a tablespoon of Wheat Germ for some extra nutrients. I have even added a spoonful of Bran Cereal if I'm feeling bloated. The cinnamon and pure maple syrup mask any taste of bran or wheat germ. Yes, that's right, you get to put syrup in this meal! Granted, it should be 100% pure maple syrup! We get ours at Sam's. Trust me, that's the cheapest way!
- 1 cup Instant Oats
- 2 cups water
- 1 medium Apple
- 2 tbsp Pure Maple Syrup
- 4 tsp chopped Walnuts
- Cinnamon to taste
- Bring 2 cups water to a boil then add oats. As soon as the water begins to boil again, reduce the heat to a simmer.
- Dice apple while oats cook.
- After 5 minutes, oats should be done. Separate cooked oats into bowls and add other ingredients.
- Serves 2.
